There is nothing quite like sausage and peppers. This is one of my favorite recipes. Sausage and peppers is easy to make and tastes even better the next day.
In a good sized bowl place an assortment of (some cut some whole) sweet, mild and hot Italian sausage. To the sausage add whole pablano, green and red peppers and quartered potatoes. Splash a fair amount of olive oil in the bowl and using your hands make sure everything is well coated.
Dust everything with ground plack pepper, granulated garlic, kosher salt, tarragon, fresh parsley and basil and again mix well making sure all is well seasoned.
Roast the contents either on the grill or in pan in a 350 degree oven to roast. Use the remaining oil and seasoning from the bowl to baste while roasting.
As the roasting is near completed - warm a large iron skillet with a splash of olive oil. When sausage, peppers and potatoes are finished grilling add to hot skillet and sprinkle all with granulated garlic, pepper, tarragon, basil, parsley and freshly sliced garlic.
Add a ladle or two of tomato gravy then add a splash or two of chianti or burgundy and simmer for a minute or two.
Serve in a large bowl with fresh crusty bread.
Cautionary Note: Cooking by hand - is just that - cooking by hand. I cook by hand so my recipes are generally a hand of this and a hand of that. A finger is as much of that item that you can hold on top of an outstretched finger. A palm is that which you can hold in the palm of your hand. A hand is that which you can hold on your hand flat with fingers stretched out. - come on folks — work with me here…. set the measuring cup aside, put down the measuring spoons and get cooking.
