This is a simple and flavorful recipe for orecchetti.
Cook your orecchetti and set aside
In a saute pan place a splash of olive oil and chopped pancetta and saute.
Add a hand of freshly chopped mushrooms and a handfull of freshly chopped green onions, and season with kosher salt, freshly ground black pepper and granulated garlic.
Add cooked orecchetti and toss. Add a large ladle of bolognese and two large spoonfulls (a large chefs spoon not one of little ones you keep in the drawer) of ricotta cheese and toss – mixing well. Add a handful or grated parmesan and a handful of grated mozzarella cheese and toss well.
Plate and serve.
Cautionary Note: Cooking by hand – is just that – cooking by hand. I cook by hand so my recipes are generally a hand of this and a hand of that. A finger is as much of that item that you can hold on top of an outstretched finger. A palm is that which you can hold in the palm of your hand.
