Thanksgiving: The Fowl Remnants

Roasted TurkeyThe evening delightful; my friends, wonderful; the dinner, a plate full; of turkey, I’m not full. What a fantastic time with good friends, conversation, drink and amazing food. The table was spectacular.

I love turkey.

Since I spent the holiday with friends I of course did not have the mouth-watering aroma of roasted turkey wafting through the lodge. So, today I cooked my own turkey so that I may have those fowl remnants to pick on for the next several days. Few thing are as fine. One of those simple pleasures.

Thanksgiving TableEach year I prepare my turkey a little different. This year I stuffed it with white wine soaked apples quartered and spiced then roasted the turkey in a blend of spiced apple cider, glazed with a rosemary and tarragon laden honey, ground pepper, ginger, and a touch of salt. It emerged from the oven tender and moist with a crisp golden brown skin. Friday supper.

I have waited a year for these special days following Thanksgiving. Turkey leftovers, sandwiches of every sort and any combination until the bones picked clean and ready for another treat: turkey soup.
