Cooking by Hand: Bearfort’s Sausage with Green Pepper and Fontinella

I love sausage but the way I make sausage may be a bit different than the way that you are accustomed. I don’t use casing.  I simply shape the sausage into a log and roast it.

Here is my recipe Bearfort style: Remember this is cooking by hand – a hand of this and a hand of that.

About 10 pounds of pork butt
One hand of kosher salt
One hand of black pepper
One hand of fennel
About a half pounds of fontinella cheese
3 large green peppers

Grind all in meat grinder

Mix together well. Shape into logs and place on large cooking sheet. Roast in oven at 350 for about 45 minutes to an hour.
