This is for a side dish of simple glazed carrots. Very quick and easy to make as a side dish for any dinner anytime be it a formal to-do or a basic Tuesday night at home.
First off I don’t peel carrots – I dont see the need for it. Just give them a quick wash.
Slice your washed carrots on a diagonal and place in microwave safe casserole and cover.
Cook in microwave on high. I like to cook most of my veggies in the microwave as they retain their flavor besides — I think veggies cooked in water on the stove loose most of their flavor as do many that are steamed as most people steam the hell out of them.
all microwaves are different — I put mine on high and cook four or five large carrots sliced in the microwave for about 3 or four minutes and check them. Give the dish a turn and put them back in — Cook them in three minute intervals – they are done when you can pierce them with a fork. Don’t over cook or they will be mush.
Once out of the microwave – carefully remove the cover (steam) and add a few pats-worth of butter then add about a handful of light brown sugar and mix well till both butter and brown sugar are melted coating all the carrots.
Everyone loves them but few will realize that its brown sugar.
